My days are varied, often stressful and needless to say no two are the same but one thing that is constant is my mid morning break — my “elevensies” as the British say. It’s the time after breakfast and before lunch when you need a pick me up to shake off the craziness of the morning and truly settle into the day.
Having lived in London for 6 years “having a cup of tea” is essential. Truth be told, being Chilean we have our tea time and we get our love of tea with milk from the British. So for me it wasn’t a new taste or tradition.
However, it’s not as simple of dumping a tea bag into hot water. That is just a monstrosity.

There is an art to tea making and our cousins across the pond have mastered this skill and judge you based on your brewing abilities. Patience and attention to detail are needed — its a true labor of love to brew a perfect cup of tea.
First thing to note is that fresh boiled water comes to the tea, not the other way around. It’s a dance — one leading and the other gracefully following to become one.

Bring fresh water to a boil, pour directly over tea bag in your favorite and clean cup.
Use a small spoon to hold down the bag.
Steep for a full 5 minutes
After letting the tea steep, remove tea bag, gently squeeze excess into the cup and add milk.
I like mine extra milky, no sugar.
The entire process is relaxing yet energizing. As I’m making my hot drink I smile and delicately move with precision and care. I don’t walk — I glide towards my work space to the gentle beat of the music playing softly in my head.
Humming along, I slowly lower to sit down to focus on that first sip — that delicious, crisp, hot, yet refreshing perfect cup of tea with milk that will ensure there is absolute joy in my day, even if all else falls down around me.
